Achari Pasta Salad Recipe

Ingredients:
- 250g of your favorite pasta (penne or fusilli recommended)
- 1/2 cup Poonjiaji's Achari Marinade
- 2 tablespoons Poonjiaji's Mango Pickle Paste
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/4 cup chopped fresh coriander
- Salt and pepper to taste
- Optional: crumbled feta cheese or shredded parmesan for garnish
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente.
- Drain the pasta and rinse under cold water to stop the cooking process. Set aside to cool.
- Prepare the Vegetables:
- While the pasta is cooking, prepare the vegetables. Dice the bell peppers, slice the red onions, and halve the cherry tomatoes.
- Place the prepared vegetables in a large mixing bowl.
- Make the Achari Dressing:
- In a small bowl, whisk together Poonjiaji's Achari Marinade, Mango Pickle Paste, olive oil, and lemon juice until well combined.
- Season the dressing with salt and pepper to taste.
- Combine the Salad:
- Add the cooled pasta to the bowl with the vegetables.
- Pour the Achari dressing over the pasta and vegetables and toss until everything is well coated.
- Garnish and Serve:
- Sprinkle the chopped fresh coriander over the salad and toss lightly.
- For an extra touch of flavor, garnish with crumbled feta cheese or shredded parmesan if desired.
- Serve the salad chilled, perfect for a refreshing and flavorful meal.
