Achari Roasted Vegetables

INGREDIENTS

  • Assorted vegetables (such as cauliflower florets, bell peppers, baby potatoes, carrots)
  • POONJIAJI'S Pickle Paste (spicy mango or lime chili)
  • Olive oil
  • Salt and pepper to taste
  • Fresh coriander leaves for garnish

METHOD

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the assorted vegetables with POONJIAJI’S Pickle Paste, olive oil, salt, and pepper. Toss well to coat the vegetables evenly.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and golden brown, stirring occasionally.
  5. Remove from the oven and garnish with fresh coriander leaves.
  6. Serve the Achari Roasted Vegetables as a flavorful and spicy side dish.
