Achari Roasted Vegetables
INGREDIENTS
- Assorted vegetables (such as cauliflower florets, bell peppers, baby potatoes, carrots)
- POONJIAJI'S Pickle Paste (spicy mango or lime chili)
- Olive oil
- Salt and pepper to taste
- Fresh coriander leaves for garnish
METHOD
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the assorted vegetables with POONJIAJI’S Pickle Paste, olive oil, salt, and pepper. Toss well to coat the vegetables evenly.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and golden brown, stirring occasionally.
- Remove from the oven and garnish with fresh coriander leaves.
- Serve the Achari Roasted Vegetables as a flavorful and spicy side dish.
