Achari Veggie Skewers
INGREDIENTS
- Assorted vegetables (such as bell peppers, mushrooms, zucchini, and cherry tomatoes), cut into chunks
- POONJIAJI'S Achari Marinade Paste
- Olive oil
- Salt to taste
- Lemon wedges and fresh cilantro leaves for garnish
METHOD
- In a bowl, mix POONJIAJI’S Ready to cook Achari Marinade Paste with olive oil and salt.
- Add the vegetable chunks to the marinade, ensuring they are coated well. Let them marinate for at least 30 minutes.
- Preheat the grill or grill pan over medium heat.
- Skewer the marinated vegetables onto skewers, alternating between different vegetables.
- Grill the skewers for about 10-15 minutes, turning occasionally, until the vegetables are cooked and slightly charred.
- Remove from heat and garnish with lemon wedges and fresh cilantro leaves.
