Kerala Fish Curry

INGREDIENTS
  • Oil 4 tbsp
  • Mustard Seed 1/2 tbsp
  • Onions 2 medium
  • Ground garlic & tomatoes 2tbsp
  • Water 3-4 cups
  • Madras Curry Powder 25g
  • Fish Fillets 450-500g
  • Coconut Milk 1/2 cup
  • Tamarind 50g
METHOD
  1. In a medium size pan heat oil & mustard seeds.
  2. Saute finely chopped onions with few curry leaves till light brown.
  3. Add ground garlic & finely chopped tomatoes.
  4. Cook for 2-3 minutes.
  5. Extract the juice from tamarinds soaked in 3-4 cups of water.
  6. Add tamarind juice & 25g Madras Curry Powder. Bring the contents to boil.
  7. Add fish fillets & fresh coconut milk.
  8. Cover the pan & simmer on medium flame for 5 mins or until fish is cooked. Garnish the curry with chopped coriander leaves.
  9. Serve the curry with Roti of Steamed Indian Basmati Rice.
